Several years ago, when I was studying the world barbecue trail, I ran across the barbecue team Hot Grill On Grill Action and became Facebook friends with one of their team members. Around 2017 he started focusing on wood-fired pizza which intrigued me to the point I was learning along from Facebook posts of his journey. In time I created my signature pizza “A Uniquely Wisconsin Pizza.” In the end I moved on to the next thing and my Facebook friend founded the wildly popular company Urban Slicer. Since that time, I have been seeking out wood-fired pizza on my travels and was glad to find The Stone Pizzeria & Pub.
Many of us remember Ziggy’s Pub, almost as many remember Lighthouse Wine Bar & Bistro, but how many know The Stone Pizzeria & Pub? All have one thing in common: their heartbeat Tony Mand. Tony’s latest iteration located at 213 S Main St, Fond du Lac still has the vestiges of Lighthouse Wine Bar & Bistro serving small plates, appetizers and that famous wood-fired pizza. Tony’s passion is real. He painstakingly makes his own chicken for both the Buffalo New York & BBQ Chicken Pizzas. He has perfected the pulled pork for the Tennessee Pulled Pork pizza. He even shared his thoughts and methods for keeping it stringy rather than mushy which is what most places serve. I normally shy away from pulled pork pizza because of mushy pork so when my wife ordered the Tennessee Pulled Pork Pizza, I was a little apprehensive but dang I was very wrong! Tony is an outside-the-box idea man which is clear in his well thought out and maybe a little mad genius-y food combinations which work well not only on paper but translated to real life.
What I recommend: The Tennessee Pulled Pork Pizza featuring Pulled Pork, onion, bacon, bbq sauce and garlic spread. The crust tony makes is light, airy and cracker thin. I am personally obsessed with cracker thin crust, so it was much appreciated. Ingredient ratio was well balanced. When it reads: Bacon we are not talking bacon crumbles like so many other places but real cubed bacon, neither sauce overpowers, and my initial remark was how perfect the wood fire brings out the smokiness that you would find in slow n low smoked pulled pork.
Where, Who, What, When: The Stone Pizzeria & Pub 213 S Main St, Fond du Lac (formally Lighthouse Wine Bar & Bistro, formally Ziggy’s Pub). Tony Mand’s menu includes Wings, Wood-fired garlic cheese bread, Buffalo New York Pizza, BBQ Chicken Pizza, build-your-own and more. NOTE: Doors open at 4pm BUT the pizza oven needs time to warm up so if you want pizza, I personally suggest arriving around 5pm or, like my wife and I, arrive before 5pm put in your pizza order then enjoy a drink while the wood-fired pizza oven gets to temp. I recommend Stone IPA.
